Sant’Andrea is a variety of rice typical of the Vercelli area, the land of rice par excellence. It belongs to the group of fine rice, has medium-sized grains with a compact structure and is characterized by good consistency and absorption capacity. Its versatility makes it ideal for many preparations, from the most elaborate to the simplest, replacing bread or as a garnish for dishes. Sant’Andrea rice is also used for the preparation of desserts, for which cooking must take longer than a few minutes.
